Portuguese salt cod stew (bacalhau or bacalhoada) is layered and baked in the oven. Made with salt cod, potatoes, hard boiled eggs, onions, olives, and lots of olive oil, it’s a satisfying recipe for cozy nights.
Grease a rectangular casserole dish (mine is 12 x 10 inches) and cover the bottom with potato slices. Top with half of the cod pieces and half of the sautéed onions. Repeat with remaining potatoes, cod and onions. Drizzle with olive oil. Bake for half an hour.
Bake in a 350°F oven for one hour. Then bake uncovered for about 15 minutes. When it comes out of the oven, grab some olive oil, drizzle… grab some olives and sliced hard-boiled eggs (2) and decorate the top. Serve hot… but, it’s still yummy when cooled a bit! Start by washing and then boiling the cod fish. Drain and boil again.
