Heat 2 tablespoons oil in large skillet or wok. Add beaten egg. Cook and scramble until cooked. Remove cooked egg from pan and set aside. Add additional 2 tablespoons oil to pan.
Add the cabbage, carrots, green onion, garlic, and ginger. Cook for 4-5 minutes until the cabbage and carrots are tender. Stir in the cauliflower rice and press down into the pan. Let it cook for 3-4 minutes without moving it until the rice begins to brown. Then stir and repeat. Stir in the soy sauce. Taste and add more soy sauce as needed.
