Servings: 6Cuisine: AmericanCategory: Main Course1. Start out by warming the avocado oil in a large oven safe skillet over medium heat. Cook the bacon until it's crisp and browned, then remove to a paper towel lined plate. Add the polish sausage and cook until browned on both sides. Remove the sausage onto a paper towel lined plate also. Add the onions and celery to the pan and cook for 3-5 minutes, then add the caraway seeds, paprika and ground black pepper. Stir until the vegetables are well combined with the seasonings and cook until the celery and onions have softened, about 10 minutes. Add in the sauerkraut and stir to combine and heat through. Then add the bacon and sausage back to the pan and stir to combine. Next, add the lemon juice and stir to combine. Level out the top and add the cheese, then crispy onions, then cubes of butter on the top. Place pan under a broiler for approximately 5 minutes. The onions are sensitive to burning so you will need to watch closely.
2. Remove from the oven and enjoy! I like to eat this with a little sour cream on the side.
