1. Grate the cheese on the medium holes of a grater to make 4 cups. Cover the grated cheese and leave out with the butter until at room temperature, at least 2 hours and up to overnight. (Note: You need to grate your own cheese here--no pre-grated.)
2. When ready to make the cheese straws, preheat the oven to 350 degrees F. Line 2 baking sheets with silicone baking mats or parchment paper.
3. Mix the flour, salt, cayenne, mustard and black pepper in a medium bowl.
4. Put the cheese and butter in the bowl of a stand mixer and beat with the paddle attachment until fairly smooth. Slowly beat in the flour mixture. Check the consistency; it should be just stiff enough to pipe. If not, add a little more flour.

1. Preheat oven to 350. Line a baking sheet with parchment paper.
2. Mix all ingredients with a wooden spoon in a medium bowl. It should come together easily if the butter and cream were at room temperature. I kneaded it with my hands for a few minutes to make sure it was mixed thoroughly.
3. To make cheese crisps/straws: Put the dough in a cookie press with the bumpy line attachment. (Descriptive, I know. Basically it's a one inch line opening with one flat side and one side with ridges). Press the dough through the cookie press onto a parchment lined baking sheet. If desired brush with extra melted butter and sprinkle with a tiny bit of garlic powder. Bake for 12-15 min out until golden brown.
4. To make crackers: Roll out the dough between two pieces of parchment paper until it is about 1/4 inch thick. Remove the top piece. Cut with a pizza cutter into squares. If desired brush with extra melted butter and sprinkle with a tiny bit of garlic powder. Bake for 15-20 min out until golden brown.
