Like most mainstream dishes, every Filipino cook or household has their versions of barbecue pork. While calamansi or lemon juice appears to be standard for most Filipino pork barbecue recipes, I use vinegar instead to help tenderize the meat.
We make this keto BBQ pulled pork in a slow cooker, but you can make it in a pressure cooker or Instant Pot too! It’s ridiculously easy to make and it’ll soon become a family favorite! First you’ll make your shredded pork by your desired cooking method (or buy it pre-cooked without BBQ sauce!). Then you’ll add the shredded pork, spices (see below) and our sugar free BBQ sauce to a medium sauce pan. Next, stir well and cook over medium heat until it’s warm throughout. Serve immediately.
