Calories: 33 per servingTotal Time: 35 mins1. Wash the green tomatoes thoroughly. Then cut them to roughly the same size, but small enough they will fit inside the canning jars. Use a variety of pint size to quart sized jars for this recipe.
2. The prepare the pickling liquid combine the vinegar, water, salt and sweetener together in a medium saucepan. Bring the mixture to a boil.
3. In the meantime, pack the jars as tightly as possible with the cut green tomatoes. Be sure to add some chilies and garlic cloves in between the layers of tomato. Feel free to add other herbs and spices to the jars if you would like to.
4. Once the pickling liquid is at a boil, pour the hot liquid into a glass measuring cup. Then use the measuring cup to pour the hot liquid into the jars. Fill the jars to the very top making sure to cover the tomatoes completely. Place the lids on the jars and allow the jars to cool at room temperature for an hour. This will help to cook the tomatoes slightly so they are not raw. Place them directly into the refrigerator after an hour. Keep jars stored in the refrigerator until they are ready to serve.
