These Peppermint Kiss Cookies are a new must-make for my Christmas Cookie tray. They have a sugar cookie base that’s topped with a peppermint kiss. In essence, they’re a peppermint-twist on peanut butter blossoms. If it were possible for me to just wrap presents and bake cookies for the next two weeks, I would be in a state of absolute bliss.
These keto Flourless Mint Cookies are super decadent with their soft fudge like center. Just a few ingredients and only 10 minutes in the oven these low carb cookies are easy to make and everyone will love them. We’ve added peppermint extract for the holidays but you can totally leave it out for a more traditional fudge cookie as well.
The Hershey’s Kiss itself adds a lot of peppermint flavor to the cookie, but I still like to use a touch of peppermint extract in the cookie dough itself. Peppermint extract can be overpowering, so I use a combination of vanilla and a touch of peppermint. If you prefer a stronger flavor, swap out more of the vanilla extract for peppermint.
