4. Pour the water used for boiling pork on step one together with the pork bones, crispy fried shallots and sugar. Simmer in low heat for two hours or until the stock is reduced to 2/3 the original volume.

4. To a large skillet add minced onion with vegetable oil and fry for 3 minutes. Add chili paste and continue to fry for another 2 minutes. Transfer onion chili mixture to a small bowl.
