1. Combine butter, peanut butter, powdered sweetener, and vanilla extract (if using) in a medium-sized bowl.
2. Using a cookie scoop, divide peanut butter mixture into 30 evenly sized balls about 1-inch in diameter. freezer for about 30 minutes to ensure they are firm.
3. Towards the end of the freezing time, start melting the chocolate in a double boiler or chocolate melter. I don't recommend using a microwave because it's easy to burn the chocolate if you aren't careful to do it in very small increments stirring after each.
4. Remove balls from freezer and dip most of the way into the chocolate leaving an uncovered circle at the top. Placing a toothpick into each frozen ball works well for dipping, but don't remove the toothpick until the chocolate is set. You may need to tip the pot to get a deep enough amount of chocolate. Once coated in chocolate, place in refrigerator to set.

1. Mix together all ingredients except the raw peanuts in a bowl until smooth.
2. Roll the dough into 1 or 1½ inch balls. You should end up with 15.
3. Place the raw peanuts in a blender (I use my NutriBullet) and pulse several times until you have small pieces. If you don't have a blender, you can chop them instead.
4. Roll the balls in the peanut crumbles and transfer them to a baking sheet lined with parchment paper.

1. NOTE: Depending on the brand of peanut butter and protein powder you use, you may need LESS protein powder. Start with adding half, then continue adding until a nice consistency is achieved. It will be firm enough to roll into balls, but soft enough that they will squish down a little when stacked on top of each other. Some protein powders are more chalky than others. I like Isopure zero carb whey protein isolate. There will be a slight crystalline feel to the protein balls when you bite into them.
2. Add the ingredients to a medium bowl and mix (knead) together with a rubber spatula until thoroughly combined.
3. Pinch-off walnut sized portions of the dough and roll into balls.
4. Store in the refrigerator in an airtight container for up to 10 days.
