3. Place the discs one-by-one over a large sheet pan (you might need two) and lightly sprinkle with coarse sea salt on both sides. Let them sit at room temperature for about 15 minutes.
4. In the meantime, make the dumpling fillings. In a large mixing bowl, combine ingredients from scallions to arrowroot starch. Stir the filling in one direction until it becomes a sticky paste, about 1-2 minutes. Cover and store in the fridge.

2. Prepare the filling while the dough rests. Combine the eggs, Shaoxing wine, and salt in a medium-sized bowl. Whisk until evenly mixed.
3. Once the dough has rested, the surface should become smoother and the texture softened. Divide the dough into two even pieces using a knife of dough cutter. Work on the dough one piece at a time. Place one piece back into the bowl and cover with plastic wrap.
4. Heat 1 to 2 tablespoons of oil in a large nonstick frying pan over medium heat until hot. Pan fry the Chinese chive pockets until the bottom turns golden brown, 2 minutes or so. Turn to the other side and fry until golden brown. If the pan starts to smoke, turn to medium-low heat. If your chive pockets are thick, you can also stand them upright in the pan to fry the edge.

2. Whip up a batch of our Crazy Keto Dough. Allow dough to rest for 10 minutes while you prep the rest (and up to 5 days in the fridge).
3. Set up your steamer, heating up the water over high heat until boiling. Place heatproof bowl with pork in the steamer (you want to catch all the juices), cover, lower heat to low and simmer for 12-14 minutes until fully cooked. Don't open the steamer until the 12 minute mark. You can alternatively fry the filling in a pan, but we found best results are achieved by steaming. Remove bowl with pork from steamer and set aside to cool completely, mixing every so often to make sure the juices are soaked back up almost entirely.
4. Heat up frying oil of choice (we used coconut) in a skillet or pan over low heat. You'll want it roughly 1-inch deep and not too hot so the dumplings cook slowly.

2. Take 1 Paleo har gow dumpling wrapper. Add about 2 tsp dumpling filling in the middle. Bring the edges of the wrapper together toward the center, press the edges together to seal (there will be three sealed edges), pinch the dough to seal the edges well. Place the dumpling over a flat non-stick surface and cover it with a cling wrap so it won’t dry out.
3. Place the dumplings over a bamboo steamer lined with parchment. Leave a little space between each dumpling so it won’t stick. You can also use a heat-proof plate if you don’t have a bamboo steamer.
4. Allow the dumplings to cool for a few minutes before removing them from the steamer/plate. When they are fresh out of hot steamer the skin tends to be extra sticky. Serve with my Paleo dumpling dipping sauce.
