1. Add the diced peaches and sugar to a deep pan. Set on the stove top, turn the heat to medium-high and bring to a boil, stirring frequently. Let boil for 7 minutes.
2. Turn the heat to medium-low and keep cooking, stirring frequently for 20 minutes.
3. Mash the fruit with a potato masher or an immersion blender. Add lemon juice and the lemon seeds and stir them in. You might notice that some foam is forming on top of the jam, you can scoop it out or keep stirring it in, usually it disappears by the time that the jam is ready.
4. Cook for an additional 20-30 minutes until the jam gels. If you need help to determine if the jam is ready, scoop a little bit of it with a spoon and set on the kitchen counter to cool for five minutes. Then, add it back to the pot and as it leaves the spoon you'll be able to measure how thick it is. Just take into consideration that the jam will keep thickening as it cools completely in the jars after canning.

1. Add peeled and chopped peaches to a saucepan along with lemon juice and calcium water.
2. Bring to a boil and simmer for about 5 minutes. Give them a quick mash with a potato masher until they're at the desired consistency.
3. In a separate container, mix the sugar and Pomona's pectin powder. It's important to mix the sugar and pectin before adding them to avoid clumping. If you're using honey, mix the pectin into the honey.
4. Add the sugar and pectin mixture into the cooking peaches, stir well and simmer for another 2 minutes.
