2. Instructions. Prep the Squash: Trim and cut the squash into wedges. Trim the tops and bottoms from 1 pound patty pan squash, then halve each squash. Cut each half into 3/4-inch-wide wedges.
3. Recipe Notes. Make ahead: The squash can be cut and refrigerated up to 2 days ahead. Storage: Leftovers can be refrigerated in an airtight container up to 4 days.
