My friend Giuseppina first showed me this method to make vegetables while we were living in France. She made this same recipe but with fennel. How delightful it was.
Your friends and family will love the crunch of the crisped parmesan against the softness of the roasted patty pan squash. Place the patty pan squash into a steamer basket over 1" of water. Steam for 10 minutes. Transfer the squash to a roasting dish.
In a large bowl, toss the pattypan squash, olive oil, salt, and pepper. Place the pattypan squash in the air fryer basket, cut side down, in a single layer. (Cook in batches if they don’t all fit in a single layer.) Air fry for 10-12 minutes at 400 degrees F (204 degrees C), until crispy and golden.
Finely grate the Parmesan cheese. Add to the pan with cooked squash. Season with salt and pepper to taste and mix until well combined. Spoon the cooked squash, bacon and parmesan mixture into each of the pattypan squash shells. Crack an egg inside each and transfer into the oven.
