1. Start by preparing the ingredients. Make the papdi at home or use store-bought ones. Chill the yogurt for at least 3-4 hours. Boil the potatoes until soft. Peel them and cube them into ½ inch cubes. Soak the chickpeas for 6-8 hours and then boil them with some salt until tender.
2. Make the coriander mint chutney and tamarind chutney.
3. Add 1 and ½ cup chilled yogurt and 2 tsp sugar to a medium size mixing bowl and whisk using a wire whisk until sugar is dissolved.
4. Arrange 20-25 papdi on a large plate in a single layer. You can also make individual portions as I did.
