DirectionsStep1Chop each fig into quarters. Wash enough jars and lids to hold 24-ounces in hot soapy water and rinse well.     1. Place the figs in a large pot the add the orange and lemon zest, sugar, Grand Marnier and pinch of salt. Stir and let stand at room temperature for one hour, stirring occasionally.
    2. After an hour, put the pot on medium high heat and bring to a boil, stirring to dissolve the sugar.
    3. Reduce heat to medium and continue to boil for approximately half an hour, stirring and mashing the figs with a potato masher, to crush the pieces. Remove from heat.
    4. Ladle into rinsed, hot clean jars (rinsed with boiling water), leaving about 1/4″ space at the top, clean the rim and cover with hot lids (also rinsed with boiling water).

    1. In a small saucepan (use a wide and shallow one, not a tall and narrow one), add the dried figs, Truvia, orange juice, and water. Let soak for 1 hour.
    2. Cover with a lid and place the saucepan over medium heat. Keeping cover on, cook for ~20 minutes, or until the figs are super soft and can be easily mushed with a fork. Let cool completely.
    3. Blend in a high speed blender (I used my Vitamix) until a spreadable paste. Store in a tightly sealed jar in the refrigerator for up to 2 weeks.

    4. Try to select figs of equal ripeness. Wash.
    5. Cut stems a wee bit around, do not expose inside of figs. If extra ripe, don’t worry, just get stem.
    6. Sugar is measure for measure but I like it rounded for figs. So not quite equal measure.
    7. Put sugar over figs (and lemon slices). Cover. Put aside until morning. (If you cook right away keep your heat low to begin with.) (Water added here.) Water different for juice. I’d say if over night, it will turn into juice so you won’t add much then. If cooking right away, try 1/4 measured to fig measure. I like to have juice to cover figs in jars. Left over juice can be used for another cooking of figs.
