This Sweet Corn Casserole is a classic, and it is also known as baked creamed corn, escalloped corn, and scalloped corn. Use a can of creamed corn (undrained) and a can or regular corn (drained). Sometimes I use fresh sweet corn that has been frozen and substitute it for the regular corn, but do NOT omit or substitute the creamed corn.
Combine both dry ingredients and wet ingredients together. Fold in shredded cheddar cheese and cream cheese. Pour batter into preheated cast iron skillet and bake on the middle rack for about 30 minutes. Remove cornbread from the oven and let sit for 5 minutes before slicing.
