1. Line an 8-inch x 8-inch baking pan (or 9-inch x 5-inch rectangle baking pan) with parchment paper. Slightly oil the paper with coconut oil. Set aside.
2. In a large mixing bowl, combine all the dry ingredients: old-fashioned rolled oats, pumpkin seeds, salt, and cinnamon, if used. Set aside.
3. In another small mixing bowl, stir drippy peanut butter, melted coconut, and maple syrup. If your peanut butter is not drippy or slightly hard, microwave the bowl for 20 seconds to soften, it makes it easier to combine.
4. Stir the liquid ingredients into the dry ingredients until evenly combined.

1. Preheat the oven to 160ºc and line a 9x9 inch (22cm) square tin.
2. Weight the butter, golden syrup and brown sugar into a saucepan. Place over medium heat until everything is melted and whisk well to make sure the butter and melted sugar all well incorporated.
3. Measure the oats into a bowl and add in both packets of chocolate chips. Pour the butter syrup mixture over the oats and mix well. The warm syrup will start to melt some of the chocolate chips as you mix. This is perfect and ensures that once the flapjacks are baked every bite will have buttery oats and chocolate.
4. Once the oats are completely covered in the buttery syrup (they'll all have a "wet" look to them) press into a square lined baking tin. Bake the flapjacks in a square tin lined with baking paper.
