1. In large sauté pan, cook cauliflower rice in 1 Tablespoon fat for 8 minutes over medium heat to melt and reduce water content. Remove cauliflower rice to a plate or bowl; set aside.
2. Preheat the oven to 350 degrees F.
3. Add ground beef, remaining fat and sea salt to same sauté pan over medium-high heat. Cook, breaking up meat with a spatula, until most of the pink is gone, about 5 minutes. Add cauliflower rice, herbs and spices: oregano, cumin, optional chili powder, garlic and black pepper. Sauté an additional 2 to 3 minutes until fragrant. Remove from heat.
4. To same large sauté pan (or use large mixing bowl if sauté pan isn't big enough), add raw chopped cabbage, salsa and tomato paste. Stir well. (See Process Photos below in Recipe Notes.)

1. Fill a large pot with hot water and bring to a boil over medium-high heat. While water is coming to a boil, remove 10-12 whole cabbage leaves from a raw head of cabbage and rinse under cold water. Place 1-2 cabbage leaves in the boiling water and blanch for 1 minute. Remove from boiling water and transfer to a large bowl full of ice water. Remove from ice water after 30 seconds or when cool enough to handle. Continue until all the cabbage leaves have been blanched.

1. Preheat the oven to 350 degrees F (177 degrees C).
2. Bring a large pot of water to a boil. Add the head of cabbage into the boiling water, immersing fully. Boil for 5-8 minutes, just until the leaves are soft enough to bend. They will turn bright green and the outer leaves might come off, which is okay and you can fish them out.
3. Remove the cabbage from the boiling water. Set aside to cool. Leave the hot water in the pot for now, you might need it again later when peeling the cabbage leaves.
4. Meanwhile, stir fry the cauliflower rice for a few minutes according to the instructions here.
