Rinse the matar or dried white peas gently under tap water. Transfer the matar to a pressure cooker. Pour in water, add salt and stir to combine. Close the lid and pressure cook the matar for 3-4 whistles.
3. Transfer the cooked matar to a large mixing bowl.

Cook the peas in a pressure cooker and remember to add salt before cooking. Cook for 3 whistles and let the steam release naturally. Transfer the peas into a bowl and keep aside.
2. In the grinder add cumin seeds, fennel seeds, whole black peppercorns, cinnamon stick, cardamom, green chillies and mint leaves. Grind them all together to make a coarse paste.
3. Heat 2 tbsp oil in a pan and add ginger-garlic paste and turmeric powder. Stir them and add coarsely ground coriander, red chilli powder, chaat masala and cumin seeds. Cook the spices for a minute and then add boiled white peas in the pan. Now, add the ground masala we made earlier to the pan along with the peas and mix well. After mixing the ingredients add tamarind water and salt to taste in the pan. Mix all the ingredients and after some time add about a cup of water in it. Allow the ingredients to cook for 8 minutes. Then, turn off the heat and transfer the Matar in a bowl.
4. Mix the maida, salt, sugar, baking powder and baking soda in a bowl along with curd, oil and water. Mix them and knead it into a dough. Cover the dough with a wet kitchen towel and let it rest for 2 hours.
