Reviews: 5Estimated Reading Time: 4 minsServings: 15Total Time: 8 hrs 5 mins1. Put your walnuts in the bowl of the food processor and blend until starting to make a walnut butter. This will take about 3-5 minutes.
2. Then add your coconut oil and syrup and blend until smooth and creamy.
3. Taste and add sweetener if you want it more sweet. Sometimes I add a bit of stevia and other times I keep it as is. Note if you add more syrup it will significantly increase the carb count.
4. Pour or spoon into silicon molds or a square baking dish.

2. In a medium saucepan, combine the maple syrup, sugar, cream and salt. Bring to a boil over medium-high heat, stirring constantly. Once you are at boiling point, clip a candy thermometer on the side of the pan and cook 7 to 8 minutes until the temperature reaches 238 degrees.
3. Remove the pan from heat. Use an electric mixer to beat in the butter and the vanilla and maple extracts. Continue to beat for 8 to 10 minutes, or until thick and light colored. The fudge should begin to lose its glossy sheen. Stir in 1 cup of walnuts. Spread into the prepared pan. Sprinkle a few more nuts on top.
