1. Rub the chicken with 1/2 tablespoon of Cajun seasoning, some salt, and pepper.
2. Heat 1 tablespoon of oil in a heavy skillet over medium-high heat.
3. Once hot add the chicken and sear for about 5 minutes per side, or until golden brown and cooked through.
4. As soon as the chicken is done, set aside on a plate and cover to keep warm. Add the remaining 1/2 tablespoon of oil and garlic. Sauté until fragrant.

Add the chopped veggies and saute a few minutes. Add the gravy mixture made with Good Seasons, vinegar and kitchen bouquet; cook until veggies are soft. Add the seared chicken breast and simmer on a low fire for about 1/2 hour or until the chicken is done. A little more water may have to be added during the cook time to prevent sticking.
