1. A around 1 tbsp of olive oil to a medium sized saucepan, once it starts to sizzle add chopped garlic and dried oregano. Fry for 30 seconds then add 1 tsp of balsamic vinegar and freshly chopped parsley and basil.
2. Fry the herbs and garlic for another 30 seconds (this helps release all the delicious flavours from the herbs) then add a can of chopped tomatoes and add a pinch of salt.
3. Add 2 tbsp of water to the empty tomato can, swirl to get as much leftover tomato as possible and add that to the sauce.
4. Stir everything together, after 1 minute use a potato masher to crush the tomatoes and break them down as much as possible (it will still be a rustic style sauce and not completely smooth)

2. Stir in the minced garlic and let it infuse the oil for about 30 seconds.
3. Use your hands and crush the tomatoes as you add them to the pot with the onion and garlic. Rustic chunks are what we are after.
4. Add the bay leaf and the 4 sprigs of basil then bring everything to a gentle simmer. Partially cover with a lid and cook down until reduced and thick to your liking. About an hour or so. Stir a few times making sure the sugars from the tomatoes don’t stick to the bottom.

1. Before you begin, pour your two cans of tomatoes into a bowl and crush with your hand. Don’t break them up too small, you want large chunks.
2. In a large heavy bottomed pot with a lid, on a burner with no flame, pour in olive oil and add red pepper flakes, garlic, onion, most of the oregano, basil and mint (save a little bit of each for the end), sugar salt and pepper. Turn on the burner and slowly bring up to hot. When the onions and garlic start to cook, stir and heat for five minutes.
3. Remove the pot from the burner and place a heat diffuser over the burner. Place the pot over the heat diffuser and add the tomatoes. Turn burner to medium high and stir until they start to boil. Then reduce to simmer, partially cover and simmer 90 minutes.
4. After 90 minutes, remove from heat and add the reserved herbs and Parmesan cheese. Add the butter to round out the flavors. Stir again and serve.
