1. Place large skillet in oven on center rack. Preheat oven to 400 degrees F.
2. Gently knead beef, egg, breadcrumbs, Italian seasoning, ¾ teaspoon salt and pepper in a medium bowl. Brush oil all over tops and bottoms of the portobello caps. Sprinkle with the remaining ½ teaspoon kosher salt. Divide the beef mixture into four even amounts, patting them into patties. Fill portobello caps with the beef mixture.
3. Remove the hot skillet from the oven. Place portobellos, meat side up into the skillet and return the skillet to the oven. Bake until the beef is browned on top and the mushroom is softened and wilted, 16 to 18 minutes.
4. Spoon marinara sauce over the beef and top with cheese. Return to the oven until the meat is cooked through, the marinara is hot and bubbling and the cheese is melted, 4 to 6 minutes longer. Let cool slightly before transferring to plates with a slotted spatula.

1. Preheat broiler, setting the temperature to high. Set an oven rack in the middle of the oven (you don't want the mushrooms too close to the heating element for this recipe). Line a broiler-safe rimmed baking sheet with foil.
2. Wipe the mushrooms clean with a damp paper towel. Gently twist off or the stem of each mushroom. Holding each mushroom in one hand, use a spoon to gently scrape out the gills.
3. Spray the mushroom caps with olive oil cooking spray on both sides. Sprinkle with 1/2 teaspoon kosher salt and 1/8 teaspoon black pepper. Broil 5 minutes on each side, or until just tender.
4. Meanwhile, defrost the spinach in the microwave according to the directions on the package (my package said to cut a small slit in the wrapper, place on a microwave-safe plate and microwave for 4-6 minutes). Place in a colander to drain. When cool enough to handle, press on the cooked spinach with your hands and extract as much water as possible out of it. Repeat this until you're sure you can no longer extract more water.
