2. Add fennel. celery, carrots, bay leaf, oregano, red pepper flakes, thyme sprigs, salt and black pepper stirring, until vegetables are softened, about 5 minutes.
3. Add wine and boil until reduced about 3 - 4 minutes. Add shellfish stock, tomatoes with their juice and saffron. Simmer, covered, 15 minutes. Season with salt and pepper.
4. Add crab, clams, mussels to the pot, cover and simmer until clams just open, about 5-10 minutes. Discard any clams or mussels that do not open after 7 - 10 minutes.

4. Just before serving, stir in basil and parsley and season with salt and pepper, to taste.
