Made with egg whites, sugar, almond flour, and almond extract, these cookies have the perfect combination of crispy edges and a soft, chewy center.
Easy soft and chewy almond cookies that are just 2 ingredients! Preheat oven to 350°F. Line a large baking sheet with parchment paper or silicone baking mat. Add almond flour and syrup to a medium bowl. Use a spoon to mix until the ingredients are evenly combined and dough comes together.
Almond flour – You must use blanched almond flour, not almond meal. Granulated sweetener of choice – Either monk fruit sweetener or erythritol. Egg whites – Lightly beaten until soft peaks form. Save the yolks to make some custard. Almond extract – Gives the cookies a lovely almond flavor.
As far as making them goes, they are a little more work than some of the other low carb cookie recipes I’m posting this week, but well worth the extra effort! Simply divide your dough into 12 balls – then roll them into 3 inch logs, press into the sliced almonds, and bend and pinch into a crescent shape and bake.
