Although, sourdough bread does have some carbs, it’s not going to make much of a dent when you’re on a low-carb diet. Sourdough has 10 grams of carbs per slice compared to the 20 grams per slice of regular bread. Consequently, sourdough bread makes an excellent choice for sandwiches or toast at breakfast time. Fortunately, there’s an easy workaround. Without a sourdough starter, you need two things: something to make the bread sour, and something to make the bread rise. For rise, this recipe uses egg whites, baking powder, and baking soda, which provide plenty of lift.
Take away ¼ cup of water or heavy whipping cream and replace it with vinegar. You will not get as much of the "sour" taste but it will work as a replacement. Lemon juice will not be strong enough and it will make your bread taste weird so skip that idea if it came to mind.
