1. Pressure Cook Apples: Place ⅛ tsp fine sea salt, ½ tsp allspice, ½ (1g) teaspoon nutmeg, 2 (9g) cinnamon sticks, ¼ cup (60 ml) water and 5 lbs (2.34 kg) quartered apples in the pressure cooker. Close the lid and pressure cook at High Pressure for 5 minutes, then 20 minutes Natural Release. Open the lid carefully.
2. Blend & Sweeten: Remove the two cinnamon stick and blend the applesauce mixture into desired consistency with an immersion blender. Taste the applesauce mixture and add in fancy molasses or other sweetener for more sweetness (for reference, we added ¼ cup (63ml) fancy molasses). Please adjust accordingly.
3. Method One - Saute Less: Use Saute Less function (Instant Pot: Press Cancel and Click sauté button once and click on adjust button twice to get to the Saute Less Function) to thicken the applesauce mixture until desired consistency & color. Roughly 30 minutes - 1 ½ hour. Stir occasionally. The applesauce mixture will splatter, so use a splatter guard, be very careful and wear a silicone mitt.

2. Place apple on a cutting board and cut each side (4 cuts) until just the core is left in the middle (see photo). Discard core.
3. Place the apples into the Instant Pot and add water, spice, brown sugar and salt.
4. Make sure rubber seal is in place inside the Instant Pot lid. Close and secure the lid to the locked position. Check to make sure the vent is turned to SEAL.

1. Prepare the apples: peel (if choosing to do so), core, and slice them.
2. Add all ingredients to pressure cooker, close the lid and set HIGH PRESSURE for 6 minutes (it takes about 12-15 minutes for it to get pressure), then 4 minutes of Natural Release. Do a Quick Release after 4 minutes, and when done open the lid carefully.
3. Using an immersion blender, blend the apple mixture into desired consistency. If you prove it, it might taste blend and not sweet enough, but it will get sweeter and more flavorful once is reduced.
4. Using the SAUTE function, set it to MORE, and then 15 minutes. The apple mixture will splatter A LOT, so be careful. Use a splatter guard if you have one, and wear mittens while stirring it. You need to stir frequently when using this method. See noted for more options for this step.

1. Wash and core the apples then place onto a cutting board, and cut into quarters with peels on. If you don’t want to core, simply cut around the core.

3. Set the timer for 15 minutes and press START or MANUAL.
4. When the timer is finished, let the pressure release naturally for about 15 minutes. Then, do a manual pressure release for any remaining steam. Remove the lid and stir in the lemon then use an immersion blender and blend until the apple mixture is completely smooth. At this point, the apple butter if fully cooked and ready for consumption but it would be more like applesauce. If you would like for it to thicken up continue through steps 5 & 6.
