1. Place a large saucepan over high heat. Add the ghee, garlic, ginger and cumin seeds. Saute for 5-8 minutes until the onion is starting to turn translucent.
2. Add the turmeric, garam masala and salt and saute for 3 minutes.
3. Add the chicken thighs and stir well to coat in the spices. Saute the chicken until it is browned.
4. Add the diced tomatoes and frozen spinach and mix through. Leave to cook for 5 minutes before adding the cream.
