Before you begin, take the spices and salt in small bowls and keep them in sunlight for 1 to 2 hours. This step is optional but does help in getting rid of any moisture from the spices and salt.
Wash, dry the raw mangoes and chop into 1-inch cube pieces. Take all the spice powders (split mustard and fenugreek seeds, salt, red chili powder, turmeric powder, hinin a bowl and mix well. Mix in mango pieces so they are coated with spices.
