2. In a saucepan, combine 3/4 cup sugar and 1/4 cup water over medium heat. Cook until it takes on a caramel color, about 20 minutes (be sure to check on it frequently). Remove the caramel from the heat, stand back, and add 1/2 cup water and 1/2 tsp vanilla. Cook the caramel to 230 degrees F on a candy thermometer, then take the caramel off the heat. Quickly stir in the almonds and spread it all out onto the sheet pan. Bake for 15 minutes, until the almonds are brown and toasty. Let the praline almonds cool, then break it into shards.
3. Lower the oven temperature to 250 degrees F. Line 2 sheet pans with parchment paper.
4. To make the meringues, beat the egg whites, salt, and cream of tartar in a stand mixer fitted with the whisk attachment, for about a minute until frothy. Bump the speed up to high and slowly pour in 1 cup of sugar. Beat to stiff glossy peaks. Whisk in the remaining teaspoon of vanilla. With dessert spoons place small mounds of meringue on the parchment paper and if desired (this is untraditional, but I like to do it), flick little peaks up. Bake for 20 minutes, until a toothpick comes out clean.
