Here is how to make Ina Garten’s lobster roll recipe. Cut the lobster meat into ¾-inch dice. Melt 3 tablespoon of the butter in a medium saute pan over medium-high heat. Add the lobster along with the celery, salt, and pepper, and cook everything, while stirring occasionally, for about 2 to 3 minutes, or until just heated through.
Transfer the paella back to the stove top and add the licorice-flavored liqueur. Cook the paella over medium heat for 1 minute, until the liqueur is absorbed by the rice. Turn off the heat and add the lobster, kielbasa, and peas and stir gently. Cover the paella, and allow it to steam for 10 minutes.
Very slightly adapted from Julia Child's Paella a l'Americaine. Prick sausages with a fork and steam in a pan with a little water till cooked through. Cool and slice. Add sausages and bacon to a large saute pan with 2 tablespoons of olive oil. Cook until lightly browned; stir in onions and peppers. Cover and cook slowly until vegetables are tender.
Add the vegetables to the paella, add one more cup of stock, and stir carefully. If the paella is dry, add more hot stock. Off the heat, stir in the Manchego cheese, olives, and scallions. Taste for seasonings and serve hot. "Cooking for Jeffrey" by Ina Garten © Clarkson Potter 2016.
