1 Prepare the pears: Peel, core, and quarter the pears. Add them to a bowl of cold water that has been acidified with lemon juice or citric acid (can use the contents of a vitamin C capsule), to help prevent discoloration of the pears from oxidation. 2 In a large (5 or 6 quart) pot, add the sugar, water, and spices.
Allow the pears to soak for 2-3 minutes in a lemon juice bath. This helps to prevent discoloration. I mixed roughly 1/2 cup of lemon juice with 1 gallon of water, and then briefly washed/dipped the pears in the solution. (It definitely worked too! My pears didn’t discolor one bit). Pack the pears into hot, sterilized jars.
