How to Make Zero Carb Gummy Candy. Add all three ingredients to a small saucepan, stir well, and cook over a low heat. It will start off as a thick paste but as the gelatine melts it will become more liquid. Cook until all the granules have dissolved – it only takes 2-3 minutes.
Cut the gumdrops into small pieces, then roll onto granulated sugar (optional). Make sure the candies are dry enough; otherwise, sugar lumps will form. Let the gumdrops stay on a rack at a cool place until the sugar dries and sticks to the candies to form coatings (about 1 – 2 days).
It attracts moisture so a few minutes after the gumdrops have been coated they get all wet and sticky. I have experimented with the ratios of sweetener to citric acid and found that 1 teaspoon citric acid to ½ cup sweetener is best. It still gives a nice sour taste without making the gumdrops get all sweaty.
Thus, you may risk failing to make the firm and gummy texture of the candies if you use agar powder instead of gelatin. – If you prefer making gumdrops with fruit flavors, feel free to substitute the hot water part with fruit juice.
