Use a medium (2 Tbs) cookie scoop to place balls of cookie dough. Rolling the dough is not necessary. Flatten the balls into 2.75″ circles and gently smooth any rough edges. I use a flat measuring cup and/or spatula. (Cookies will not spread during baking) This makes 7 large cookies (but 1 cookie can be 2 servings.)
