1. Preheat the oven to 350 degrees F. Lightly spray your madeleine pan with baking spray.
2. Mix the sugar, butter, 2 egg yolks, honey and vanilla in a bowl with an electric mixer. Fold in the flour. Separately whip the egg whites until fluffy and somewhat stiff. Gently fold them into the batter.
3. Fill the madeleine pan then bake for 10-12 minutes or until lightly golden brown. Let cool in the pan briefly before moving to a wire rack. Dust with confectioners sugar if you wish.
