1. Preheat oven to 350 degrees Fahrenheit. Spread hazelnuts in an even layer on a baking sheet. Bake for 8-10 minutes until toasted. Remove from oven and allow to cool for 1-2 minutes.
2. Transfer hazelnuts to a clean kitchen towel. Using the towel, rub the hazelnuts together to remove as much of the skins as possible. Once complete, place hazelnuts in the bowl of a food processor.
3. Process hazelnuts, stopping occasionally to wipe down sides, until it goes from crumbly to a creamier consistency. Once hazelnuts start to turn into butter, add the remaining ingredients. Process until chocolate hazelnut butter is completely smooth.
4. Store chocolate hazelnut spread in an airtight jar in the refrigerator. The spread will thicken as it chills. Before using, stir to reintegrate. Chocolate hazelnut spread can be stored in the refrigerator for up to two weeks.

1. Hazelnuts: Preheat oven to 350°F (176°C). Spread hazelnuts onto a rimmed baking sheet, then roast for 12 to 15 minutes, or until slightly toasted. (If your hazelnuts still have skins on them, transfer onto a kitchen towel and roll with your hands to remove skins.)
2. Puree Dates: Meanwhile, add dates and water to a food processor or strong blender, and puree until smooth, scraping down sides as needed. Remove date paste and wipe clean.
3. Puree Hazelnuts: Add roasted hazelnuts to the food processor or strong blender and run for 8 to 15 minutes, or until a smooth nut butter forms (it will go from crumbs to a thick paste to nut butter, be patient!).
4. Combine: Add date paste, cocoa powder, vanilla, and salt, then blitz to combine. Drizzle in almond milk, using only as much as is needed, to reach a smooth, Nutella-like consistency.
