1. Combine almond flour, cocoa powder, maple syrup, coconut oil, and peppermint extract in a bowl until a dough is formed. The cookie dough may seem a little crumbly and that is totally OK. Place the dough in the refrigerator for 15 minutes to chill.
2. Preheat the oven to 350 degrees F and line a baking sheet with parchment paper or a silpat mat. Place the cookie dough in between two pieces of parchment paper and roll out the dough until it's about 1/4 inch thick. Using a small circular cookie cutter, cut out the cookies and place on the cookie sheet. Bake for 13-14 minutes. Once the cookies are baked, let them cool completely.
3. Once the cookies are completely cool melt the chocolate and coconut oil in a microwavable safe bowl for 1-2 minutes depending on your microwave. Stir every 30 seconds. Once the chocolate is melted and smooth, stir in the peppermint extract.
4. Use a fork to dip the cookies in the melted chocolate. Scrape off any excess chocolate off on the side of the bowl and place the cookie back on the cookie sheet. Once all of the cookies are coated in chocolate, place in the freezer for about 30 minutes to let the chocolate set. You can eat these straight from the freezer and don't need to thaw. Enjoy!

1. In a large bowl using a hand-held mixer or stand mixer fitted with a paddle attachment, beat the butter for 1 minute on medium speed until completely smooth and creamy. Add the granulated sugar and beat on medium high speed until fluffy and light in color. Beat in the egg, vanilla extract, and peppermint extract on high speed. Scrape down the sides and bottom of the bowl as needed.
2. Sift the flour and cocoa powder together in a medium bowl. Whisk in the baking powder and salt until combined. On low speed, slowly mix into the wet ingredients until combined.
3. Divide the dough into 2 equal parts. Roll each portion out onto a piece of parchment to about 1/4″ thickness. Stack the pieces (with parchment paper between) onto a baking sheet and refrigerate for at least 1 hour. Chilling is mandatory. If chilling for more than a couple hours, cover the top dough piece with a single piece of parchment paper. You can chill up to 2 days.
4. Once chilled, preheat oven to 350°F (177°C). Line 2-3 large baking sheets with parchment paper or silicone baking mats. Remove one of the dough pieces from the refrigerator and using a 2-inch round cookie cutter, cut in circles. Transfer the cut cookie dough to the prepared baking sheet. Re-roll the remaining dough and continue cutting until all is used.

Mix until the cocoa powder is integrated and the batter resembles a thick frosting. Add the flour and mix just until the flour is combined, making sure to not over mix.
3. Form dough into a ball. Knead a few times to bring together, then flatten into a disk between half an inch and one inch thick, cover in plastic wrap then place in freezer for 15 minutes.
4. Remove dough from the freezer and roll it out really thin on a floured surface, about 1/8-inch. Cut cookies using 1 1/2-inch cutter (I used a small cordial glass that measured almost 2" and it was the perfect size).
