Stir to combine and bring up to a boil. If the mixture produces large explosive bubbles, stir to break the big bubbles into little bubbles. This phenomenon will quickly subside.
3. Line a large sheet pan with a piece of parchment. Using a small dinner spoon, scoop up a spoonful of the caramel and almonds and drop it onto the parchment. Two sheet pans may be needed. Place the sheet pans with the low carb turtles in the refrigerator for 30 minutes.

Remove immediately from the heat and add the salt and reserved cream. Stir until smooth. Pour onto the foil lined tray and refrigerate until firm to the touch (about half an hour).
3. Melt the chocolate. I do this in a glass bowl in the microwave stirring every thirty seconds. Add sweetener if needed. Pour half of the chocolate on top of the toffee. Put in the freezer for a few minutes until the chocolate is solid. Flip over the toffee bark and peel off the foil. Put the foil back on the tray and put the toffee on the chocolate side down. Pour the rest of the chocolate on top. Refrigerate or freeze until firm.
4. The filling stays soft like caramel at room temperature but hardens like a toffee overnight or after refrigerating.

2. Microwave Method: Pour the heavy cream into a microwave safe glass bowl big enough to accommodate the chocolate chips and cream with room for stirring. 3. Shape: Put a piece of waxed paper on your work surface. Scoop the firm chocolate ganache from the bowl with a small dinner spoon or a melon baller and place onto the waxed paper. Continue until the ganache is gone. If the ganache is too firm, let it warm up for 30 minutes to 1 hour before scooping. I had to use a toothpick to help get the sticky chocolate ganache out of my melon baller. I'm sure a small cookie scoop would have been perfect.
4. Roll each portion of ganache into round "truffles" - I used my hands. If you don't like chocolate on your hands, use gloves or even sandwich bags on your hands. I weighed each portion (15 g) before rolling to make sure my truffles were the same. If your truffles are too warm and soft to shape, refrigerate them for 30 minutes or until they are firm enough to handle.
