Cuisine: AmericanEstimated Reading Time: 5 minsCategory: Dressings, Condiments & SaucesTotal Time: 55 mins1. Wash and dry canning jars, rings, and lids. Put the jars, rings, and lids in simmering water. This keeps them sterilized. I like to put my jars in the canner and the rings and lids in a separate, smaller pot. Let them simmer while you prepare the hot sauce.
2. To prepare the peppers, cut off the stems. Remove the seeds from some of the peppers for a milder hot sauce. I left the seeds in mine.
3. Put all ingredients in a non-reactive pot. Stainless steel, ceramic, or enamel coated metal pots are all non-reactive.
4. Bring to a boil then cover and simmer for 20 minutes.

Total Time: 1 hrCategory: CondimentCalories: 113 per serving1. Rinse and dry all of the peppers and remove and discard stem end. Chop the peppers in small pieces and transfer to non-reactive pot. We use a enamel coated cast iron pot.
2. Add chopped garlic, vinegar, sea salt and bring to a boil. Reduce to simmer and leave to cook for approximately 40 minutes, stirring occasionally until the peppers are very soft. Remove from heat and let cool partially. We typically wait about 15 to 30 minutes.
3. Transfer cooked pepper mixture, in batches, to a blender and process until completely smooth. Stir in the maple syrup to combine.
4. Store in glass bottles or jars of your preference in the refrigerator. Given the high acidity level, it may be possible that you needn't refrigerate it, but we prefer to refrigerate it to be certain it stays fresh.
