To Make Cider from Scratch (in place of store bought): Combine 10-12 apples (any variety), 1/4 to 1/2 cup sugar (depending on apples), 2 cinnamon sticks, 3 slices lemon, and 3 slices orange in a large pot. Add enough water to cover apples by an inch or so. Simmer for 35-45 minutes or until soft. Gently mash apples and strain through cheesecloth.
A pressure cooker will only take about 30 - 40 minutes, but you will need to cut this low carb apple cider recipe into a much smaller portion size to safely get all of the ingredients in there. The slow cooker method will take about 8 hours for the apples to super tender and able to be mashed with a potato masher.
The only truly "essential" spices are whole cinnamon sticks. We used eight cinnamon sticks, but we love a lot of cinnamon flavor. Some of our favorite additions are fresh ginger, cloves, nutmeg, allspice and star anise. If you don't like or don't have any of the spices or aromatics for this low carb apple cider, don't worry.
Ladle the hot apple cider mixture into the strainer and strain out the apple mash and spices. Then serve the cider warm, or move it to an airtight container and chill until ready to serve. If your slow cooker doesn’t have enough room for all 14 cups of water in the beginning, that’s OK.
