2. Taste and adjust flavor as needed, adding more lime juice for acidity, salt for saltiness, habanero peppers for spice, or garlic for "zing."
3. Store covered in the refrigerator for about 7 days, oftentimes more. Freeze leftovers in an ice cube tray and store in the freezer for individual use up to 1 month.

3. Pour the puree into a saucepan. Add the rest of the ingredients and bring up to a simmer. Simmer for five minutes. Taste the sauce and adjust the seasonings. I added more lime juice and a touch more salt.
4. Put the sauce through a mesh strainer, pushing down firmly to get as much of the good sauce through as possible.
