It should be no surprise that my #1 favorite low carb candy recipe was for peanut butter chocolate squares. I’m a HUGE fan of peanut butter. In fact, I updated that recipe into actual sugar free peanut butter cups.
All you need are three ingredients and a candy mold: sugar free jello, unflavored gelatine powder and ¼ – ⅓ cup cold water. The amount of water used depends on how chewy or firm you want your gummy candies. ¼ cup water makes them really quite firm – but I rather like that! Candies made with ⅓ cup water are softer and of course it makes a few more!
This is a sweetener-free treat but you can add your favorite low-carb sweeteners such as stevia or powdered erythritol. Enjoy! This ratio of liquid ingredients to gelatin will result in very firm gummies. You can use up to 1/2 cup more liquid ingredients for chewy gummies.
