An interesting idea. However this appears to be a standard caramel corn recipe that merely omits the corn syrup. You can do that, however the purpose of the corn syrup is to help prevent crystallization. (Gritty, or grainy). A better choice is to add 1/4 teaspoon of cream of tartar to the original ingredients.
