1. Preheat two teaspoons oil over medium-high heat in a large oven safe pan.
2. Chop one medium onion and 1 pound of sausage of your choice into 1/4 inch medallions. I used Butterball Smoked Sausage.
3. Add the onion and sausage to the pan. Cook until onion is clearing nicely and sausage is browning. About 5 minutes.
4. Add two cloves of minced garlic and cook another 30 seconds.

5. Preheat oven to 375°F. Spray a 9x13-inch baking pan with oil spray.
6. In a large pot of salted water, cook pasta according to instructions until al dente (I like to under-cook it 3 or 4 minutes as it will cook more in the oven). Drain and return to pot.
7. Meanwhile, in a medium saucepan, add olive oil and sauté garlic. Add chopped spinach, salt, pepper and crushed tomatoes. Season with basil, oregano, salt and pepper and cook 5 minutes.
8. Add sauce to the pasta and combine. Add half of the mozzarella, Parmesan cheese and ricotta. Mix well then transfer to the baking pan.

1. Cook the pasta according to the instructions on the packet. Meanwhile, cook the sausages in a frying pan sprayed with low calorie cooking spray over a medium heat for around 15 minutes, until cooked through and browned.
2. Cut the cooked sausages into 2cm pieces and place into a saucepan on a medium heat. Spray with a little low calorie cooking spray, then add the chilli flakes, garlic and cook for 1 minute. Pour in the passata and add the oregano and half of the fresh basil. Cut the green beans into 2 cm pieces and add to the pasta 2 minutes before the end of cooking.
3. Drain the pasta and beans and add to the saucepan with the tomato and sausages. Season to taste and mix well.
4. Serve immediately, top with the rest of the fresh basil and a little parmesan if you fancy!
