2. Once you got the chicken going, spray another skillet with spray and add the peppers. Sprinkle salt and pepper and cook for about 10 minutes until starting to brown. Set aside when done.
3. While the chicken and peppers are cooking, mix the cauliflower rice, oil, cumin, chili powder, salt, garlic powder and onion powder. Microwave for 5 minutes in the microwave.
4. To assemble, scoop 1 cup of finished cauliflower rice in each bowl. Top with the chopped tomoates, cilantro, cheese and chicken. Top with avocado or sour cream or both!

4. To Serve, top with avocado, cheese, jalapeno, sour cream, tomato, and any other desired toppings. Feel free to customize these to your preference. Serve alone or over cauliflower rice if desired just be sure to update your personal nutrition info as needed.
