    3. Make the marinade by mixing together the olive oil, lemon juice, garlic, herbs and spices. Pour half of the marinade in the bowl with the chicken and the other half in the veggie bowl. Mix, cover with plastic wrap and refrigerate for a least 2 hours or overnight, stirring every couple hours to allow all the flavors to incorporate.
    4. When ready, thread chicken and veggies on a skewer. (Note: if using wooden skewers soak them in water for a 1/2 an hour before use)
