2. In food processor shred the carrots then transfer to a medium bowl. Then add in egg, almond flour, chopped chive, cheese, dill, cayenne & salt.
3. With a fork whisk together ingredients until throughly combined. Then divide out batter so you form 6 patties. Flatten in your hand, about 1/4 inch thick, round in hand & then place on baking sheet with parchment paper or on Silpat.
4. Bake at 425 degrees for 10 minutes, then with a spatula, carefully flip them & bake for another 10 minutes until they start to get crisp. Then enjoy! Dollop of sour cream or any of the suggestions above!!
