1. To cut cabbage: Cut the cabbage in half. Cut each half in half again, so you have 4 quarters. Cut down at a diagonal to remove the core from each quarter. Slice each quarter into strips, about 1/3" each. (See how-to video below in recipe Notes.)
2. Heat large sauté pan over medium-high heat until very hot. Add fat, then cabbage and sea salt. Sauté for 5 minutes; then turn heat to low and cover for 5 minutes.
3. Over high heat, bring large saucepan or stock pot of water to a boil.
4. In a large mixing bowl: Sprinkle coconut aminos, herbs, sea salt and optional ginger/pepper over ground meat. Mix it into the meat; but don't over-mix. Form meatballs, whatever size you like. I prefer large meatballs (about 1"+ in diameter) because they remain moist inside and they're faster to make.

2. Heat a pan over medium heat. When it is very hot, add the butter or oil and swirl to coat the pan. Add the cabbage, onion and garlic and saute until the cabbage is tender - about 10 minutes.
3. Salt and pepper to taste.
4. Serves 4 at 4.6 net carbs each.

2. Cut the stem end off of the cabbage. Next, cut it in half from the top of the cabbage down through the stem. Place the flat, cut side against the surface of your cutting board, then each half into quarters (again, from the top down towards the stem). Turn each quarter crosswise, then cut into thin, 1/8-inch strips. Keep handy (I like to pile my cut cabbage into a bowl as I go).
3. Heat a large, deep skillet, Dutch oven, or wok with a tight-fitting lid over medium-high heat. Add 1 tablespoon of the oil. Once hot and shimmering, add the chicken. Cook, breaking up the meat. Stir in the remaining 2 tablespoons soy sauce. Continue cooking until the meat is fully cooked through and any liquid that has collected in the pan has mostly cooked off, about 5 minutes. Transfer to a plate or bowl. Make sure you have the skillet lid handy.
4. Add the remaining 1 tablespoon oil to the skillet. Add the cabbage and carrots. Cook for 2 minutes, stirring occasionally, until the cabbage is just starting to wilt.
