Making the crust: In your food processor or coffee / nut grinder grind 1 tbsp cinnamon, walnuts, almonds, Brazil nuts and coconut flakes until they can stick together. Place in a spring form and using your hands spread the crust by pressing the mixture to cover the surface evenly (make sure it's not too thin).
2. Cook butternut squash in water until soft. Remove water.
3. Add soaked dates (without the soaking water), coconut oil, coconut cream,1 tbsp cinnamon, ginger, & nutmeg (I did this directly in the pot where I cooked the butternut squash). Using a hand-blender blend all these ingredients until you get a very smooth texture. If not cool yet, wait for the mixture to cool off.
4. Then spread the filling over the crust in the spring form, cover and put in the fridge for 5-6 hours. I did it overnight - the filling needs time to develop that creaminess. In the morning - you're ready!

Servings: 8Total Time: 1 hrCategory: DessertCalories: 260 per serving1. Cut, peel and chop the butternut squash in cubes. Boil it in water until ready (about 10 minutes).
2. Preheat the oven to 350 F/ 180C.
3. Make the crust: Combine almond flour, 1/2 cup of coconut flour, 1/2 tbsp cinnamon and 1 Tbsp coconut sugar in a bowl. Add 1 Tbsp coconut oil and 2 Tbsp water and mix until you get a crumbly mixture that sticks together. Spread that mixture in a springform pan and cover the base with the mixture pressing it down to make the crust, as if you're making the crust for a cheesecake.
4. Making the filling: Once the butternut squash is done, drain the cooking water very well. You can process the filling either directly in the pot using a hand blender or a masher (if you're ready for some arm exercise) or transfer the squash and the rest of the ingredients to a blender or food processor. Whichever method you choose - add the 1 tbsp cinnamon, the ginger, nutmeg, cloves, coconut cream, 3 Tbsp coconut oil, 4 Tbsp coconut sugar and 1/2 tsp coconut flour. Then give yourself time to ask the question: Could I have used a whole coconut instead of all of its parts disected? I guess some questions will remain a mystery for centuries to come.
