Total Time: 1 hr 30 minsCategory: Appetizer, Bread, Breakfast, SnackCalories: 152 per serving1. Combine the Mozzarella cheese and cream cheese in a large microwave-safe bowl. Heat in the microwave for 30-second intervals, stirring after each interval until the cheeses are fully melted.
2. Add the almond flour, 3 tbsp of coconut flour, sweetener, baking powder, and xanthan gum. Mix until the ingredients are mostly mixed in, then add the eggs. Continue mixing until you have a uniform dough. I find it easiest to use a rubber spatula, but be prepared, this part can take a while.
3. Place the dough in the refrigerator for 30 minutes. Meanwhile, preheat the oven to 350 degrees and grease a 7x11 baking dish (an 8x8 or 9x9 would also work).
4. Remove the dough from the fridge and sprinkle the top with some of the remaining coconut flour. Using your hands, roll the dough into 12-15 balls a little bigger than a golf ball. Sprinkle with more coconut flour if the dough becomes too sticky to handle.

Total Time: 40 minsCategory: Side DishCalories: 316 per serving1. Preheat oven to 350°F. Line the bottom of a 9 inch square baking pan with parchment paper.
2. In a small bowl, whisk together almond flour, coconut flour, baking powder and erythritol.
3. Add mozzarella and cream cheese to a large microwave-safe bowl. Cover the cream cheese with mozzarella (this will prevent the cream cheese from overheating). Melt in the microwave at 30 second intervals. After each 30 seconds, stir cheese until cheese is completely melted and uniform and resembles a dough in appearance. This should only take around 1-2 minutes total cooking time. Do not try to microwave the full time at once because some of the cheese will overcook.
4. Add cheese, flour and eggs into a food processor with dough blade attachment. Pulse on high speed until the dough is uniform. The dough will be quite sticky.

Frequently Asked Questions

How do you make adobo for pasteles?

Add the garlic, onion, bell pepper, small green peppers, tomatoes, culantro, and oregano, and sauté for another 5 minutes. Stir in the chickpeas and olives (with their respective liquids), capers, and raisins. Cover and simmer over low-medium heat for 40 minutes. When done, uncover and allow to cool.

What are keto hawaiian rolls?

Be forewarned that while these taste very similar to tradition Hawaiian rolls, they don't have the same soft, pillowy texture. These rolls are more biscuit-like in texture, but delicious nonetheless. The ingredients for these Keto Hawaiian Rolls are pretty standard in a well-stocked ketogenic pantry. The only exception to this is the Xanthan Gum.

How do you sweeten hawaiian rolls?

The coconut flour helps the rolls fluff up and the superfine almond flour provides a soft texture for the rolls. Hawaiian rolls are sometimes sweetened with both sugar and pineapple juice. To make these low carb, I only sweetened them with erythritol.
